What's on the Menu Monday? Baked Salmon with Tomatoes, Spinach and Mushrooms

I'm not a fan of Salmon. In fact, any kind of fish was a no-no for me for a long time. But I've slowly built an appreciation for mild fish like tilapia, mahi-mahi and grouper. In fact, I love going to the beach and having a meal of blackened fresh fish, right on the water! Come on, summer time!

My husband, however, IS a fan of salmon. And in order to add some variety to our menu (in hopes of raising a fish-eater) and do something just for my sweet hubby, I've found a recipe I enjoy just as much as he. And it is packed with fresh, healthy ingredients that I feel good serving to our family.

Give it a try if you already like salmon, or if you have a salmon-lover in the house.

Full Plate Living's Baked Salmon with Tomatoes, Spinach and Mushrooms over buttered orzo

Baked Salmon with Tomatoes, Spinach and Mushrooms
1 lb. salmon fillet/s, divided into the number of servings you need
2 cups chopped fresh spinach leaves
1 cup sliced fresh mushrooms
1 tomato, chopped
1/2 cup Sun-Dried Tomato Dressing (Kraft)

Heat oven to 375. Place fish fillets skin side down in 9x13 baking dish sprayed with cooking spray. Combine remaining ingredients; spoon over fish. Bake 20-25 minutes until fish flakes easily with fork.

Serving suggestion: Serve over rice pilaf or buttered orzo.

Budget-friendly idea: I plan my meals weekly and do grocery shopping just one day a week. I plan to cook fresh salmon the day I go grocery shopping because you can get a much better price on marked down fish that is nearing the "use by date." Plus it's such an easy, almost one-dish meal, that I don't mind cooking it after having a shopping day!
