This go-to dish is pulled from a cookbook given as a wedding present from the mother of one of my college room mates. The cookbook is filled with highlights and notes which are very helpful when selecting a recipe to try. Her personal notes make the cookbook one of my favorites.

Ham Skillet Salad
1/4 c. chopped green onions
1/4 c. chopped green pepper (optional)
2 c. diced cooked ham
1 Tbsp. oil
3 or 4 medium potatoes, diced and cooked (3 c.)
1/4 tsp salt
dash of pepper
1/4 c. mayonnaise
1 1/2 c. sharp cheddar cheese, diced
Cook onions, pepper, ham and oil until meat is browned in frypan. Add potatoes, salt, pepper and mayo. Heat and mix lightly. Stir in cheese and heat until cheese begins to melt. Makes 4 servings.
Notes: I omit the green pepper as my family doesn't really care for them. You can usually find diced or cubed ham packaged in the refrigerated section with the whole hams or ham steaks. You can use any type of potato, but red new potatoes are nice because you don't have to peel them. Make sure you don't overcook your potatoes so they will hold their form when mixed with the other ingredients. I don't add quite as much cheese because it seems to make the dish a little oily as it melts down.
